Gluten Free Lady Chili


This is the tastiest Chili I’ve ever made! Make it exactly like this and you’ll be in Chili heaven! This one could win a prize in the Chili cook off! It’s so easy to make a one pot meal!

3 Tablespoons olive oil
About 1 / 2 lb of Ground Pork
1 lb Grass Fed Ground Beef
About cup and half Pacific Beef Stock.  Eye ball it to the consistency you prefer..
1 15 Oz can Organic Diced Tomatoes
1 Can Cannilini Beans
Half Sweet onion
3 cloves garlic
1 Roasted Jalapeno seeds removed
1 /2 Roasted Pablano pepper seeds removed or I use some Limon pepper from our garden. Use whatever pepper you like.

1 packet organic Chili mix. (From Whole Foods) or I use Errols Spice from Paleface Feed store, 1 teaspoon cumin, garlic and onion powder.

Fresh thyme, oregano

Jalapeno or Limon Pepper. Depending on how hot you like it! 

Kosher salt and garlic pepper

Saute onions in olive oil, brown pork and beef, add in garlic and peppers, spice pack and other spices, thyme, salt and pepper, beef stock, tomatoes, beans and simmer for about 35 to 40 minutes.

Top with cheddar cheese, green onions and some organic sour cream (of course always optional). 

Eat with gluten free garlic toast! I love Canyon Bakehouse bread.
