Paleo Refried Rice


Since eliminating grains lately I've been getting more into Paleo cooking and absolutely loving everything I'm learning about this way of life and cooking such delicious healthy foods! One thing I really miss is RICE! Especially refried shrimp rice!! Now I can have it without my gut being upset by grains! My newest addiction and it's actually a good one! Yippee!

I still remember over 9 years ago being so sick after my doctor telling me my body just could not tolerate gluten/wheat.  It took me a few years to finally comply with this way of eating and that was after becoming so ill I could barely function any more so it was absolutely necessary for me to make a change for the better or just lie down and die! 

Well after many years of no wheat I finally came to realize over a year ago that corn upset my gut too so I've not had any since January 2016. That's a long time but now I'm just used to not eating corn and in fact, have found other great foods to replace it, more on that in a minute.  I have also given up all grains for a consecretation period of 40 days that my husband and I've been going though since March 20th, 2017 for a discipleship class we have been in for over a year now.  I've been immersing myself more and more into Paleo cooking, ordering cookbooks, googling recipes, etc.  My newest love is Cauliflower rice!!  A friend at our church told me about it and then another friend told me about making Refried rice with Cauliflower!  Oh my gosh, how did I miss this healthy culinary gem that can be turned into such deliciousness?!   I got right on it and boy oh boy is it incrediably addictive in a VERY GOOD way gang!  So dig in!  Your tummy will sing praises to you! 

As for the corn thing, I found some awesome casava/coconut tortillas last year by a company down in south Texas.  This is a hispanic family who had to come up with gluten/grain free tortillas for the sister who had auto-immune disease (just like me).  Well one day I was chatting with the Lord and said, it sure would be great if these gals came up with a tortilla chip that people like me can eat and enjoy without hurting later!  Then Lo and Behold we found them recently in Whole Foods!  And dang if they are not even tons better than corn!  Really!   Light and crispy!   So unbelievably good you'll think you're eating corn! Ok so I'm addicted to them too! And no tummy sick after!   And they are made with Casava, coconut flour, avocado oil, ground chia seed, sea salt, how bad can that be???  I eat them with salsa, queso, guacamole, make nachos, all kinds of possibilities!  

With God ALL Things Are Possible even an awesome tortilla chip that doesn't ram up the gut!!! 

Ok now for RICE that's NOT rice!!  heehee!  

Here are 2 versions of Paleo refried rice plus how to make simple cauliflower rice below.

 

Ingredients

  1. 1 tbsp coconut oil
  2. 1 cup white onion, finely chopped
  3. 2 cloves garlic, minced
  4. 8 oz. shrimp, peeled and deveined
  5. 1 medium carrot, chopped
  6. 1/2 cup peas
  7. 1/4 cup red bell pepper, finely chopped
  8. 2 cups cooked cauliflower rice (see below)
  9. 2 eggs, beaten
  10. Salt and pepper, to taste

Instructions

  1. Heat a wok or large pan over medium-high heat. Melt the coconut oil and add the onion and garlic to the pan. Cook for 3-4 minutes until the onion starts to soften. Add the shrimp and cook for 1 minute.
  2. Add the carrot, peas, and bell pepper to the pan. Cook for 3-4 minutes, and then stir in the cauliflower rice. Clear a circle in the center of the pan and pour in the beaten eggs. Stir to scramble the eggs and then combine with the other ingredients. Season with salt and pepper to taste.

Rice is such a staple in so many different cuisines that it is not surprising that Paleo chefs have been hard at work coming up with ways to substitute it. One of the most effective ways is using cauliflower that has been chopped up until it is the size and consistency of cooked rice (I blend mine in the food processor, it's quick). Once you have a supply of cauliflower rice on hand you can use it in many different ways while cooking, including in sushi, as fried rice, or as a side dish to any of the meats that you will be eating while on the Paleo diet.

What you will need:

Directions:

  1. Chop cauliflower in food processor until it resembles rice.
  2. Place in a pot on low heat.
  3. Mix occasionally until hot.
  4. Turn off heat and let sit
  5. Enjoy with your favorite sauce, make refried rice above or simply with some herbs, butter or ghee!
