This chicken dish is so delicious and very quick and easy to prepare! It goes great with the side salad. Great Valentines dinner! Your date will love you! Oops, except for the garlic! LOL!
I found this recipe for Lemon Chicken on the Food Network. It's a recipe from Rao's in New York that I've tweaked just a bit to our liking. He doesn't use garlic in his but I use garlic in all my cooking so in it goes! This dish is so delicous and easy to make! Those who love lemon, garlic and chicken are gonna love it!
3 organic chicken leg with thigh pieces
Kosher Salt, Garlic Pepper
1 Cup good Olive Oil
Juice from 3 or 4 organic lemons (if you like it more lemony use more!) I used 3 and it’s just right for us.
3 cloves garlic minced garlic
1 / 4 cup red wine vinegar
1 teaspoon Fresh or dried Oregano
Place oven on broil. Put chicken pieces in an iron skillet, salt and pepper. Broil for 30 minutes. Remove chicken and cut into 2 pieces each. Pour lemon mixture over the chicken and place back under broil for about 3 to 4 minutes (depending on your oven). Ours is electric. I like mine crispy on the outside!
Sue's Gluten Free Lady Side Salad with Red Wine Vinaigrette
We recently had this salad at J5 Steakhouse in Spicewood and it was so dang good I had to recreate it at home!!
1/4 cup red wine vinegar
1/2 teaspoon Dijon mustard
1 clove minced garlic
Pinch kosher salt
1 teaspoon honey
1 teaspoon dried stevia herb if you have it from the garden
1/2 cup good olive oil
Organic loose leaf lettuce
Organic salad greens with purple lettuce
Organic baby spinach
Organic cherry tomatoes sliced
Organic calamari olives
Walnuts, sunflower seeds
2 organic raw asparagus spears for each chilled plate
