
Check out this no grain holiday stuffing from The Virgin Diet! All you Paleo lovers are gonna eat this up! Soon as I make this on Thanksgiving I'll snap a photo!
1 Package of bacon (I always buy the apple wood bacon at Whole Foods with no nitrates or gluten free bacon)
5 stalks celery, diced
1 large Vidalia onion diced
2 organic Green Apples, cored and dice, leave pealing on
1 LB Pan Fried Sausage (I buy the Pork from my Whole Foods butcher without all the hormones or antibiotics)
8 Oz Cremini mushrooms, chopped up (I love Cremini’s because of their flavor!)
2 Tablespoons apple cider vinegar
1 cup dried cranberries
1 cup chopped pecans or walnuts
2 teaspoons poultry seasoning
1 / 2 cup fresh parsley minced
2 Farm Fresh organic eggs, slightly beaten
1 / 3 cup low sodium Pacific Gluten Free Chicken Broth
Preheat oven to 375. Chop bacon and cook in large skillet over medium heat until the fat starts to release and add celery, onions and apples cooking for 5 minutes. Add sausage and mushrooms and sauté until the bacon and sausage cook through. Drain off the excess fat and place remaining ingredients in a large bowl and add in the contents from skillet and blend well. Spread the mixture in a 9 x 13 baking pan and bake for 20 minutes until lightly browned.
