Stuffed Tomatoes on the Beach!
Saw these little yummy delights made on the Cooking Channel by one of my favs David Rocco Dolce Vita in Italy where he made these right on the beach with a bowl, whisk, small knife and a spoon! A healthy and yummy protein treat to hold you through to lunch or dinner! Besides I love anything Italy and David's such a cutie! Made these last night and they are incredibly delicious! They taste like a tuna sandwich without the bread! First time I've made homemade mayo! So easy! My husband wolfed them down! Next time will make them with crab or shrimp! Yummie good and healthy too!

Kale and Sweet Potato Soup
This is a hearty cold weather meal. This soup has a ham bone in it for flavor, but you can leave it out and just have a vegetable soup if you like. I always buy ham with the bone in. Sometimes when they remove the bone, they glue it back together to look pretty using some wheat glue. So make sure you buy gf ham.
