Saw these little yummy delights made on the Cooking Channel by one of my favs David Rocco Dolce Vita in Italy where he made these right on the beach with a bowl, whisk, small knife and a spoon! A healthy and yummy protein treat to hold you through to lunch or dinner! Besides I love anything Italy and David's such a cutie! Made these last night and they are incredibly delicious! They taste like a tuna sandwich without the bread! First time I've made homemade mayo! So easy! My husband wolfed them down! Next time will make them with crab or shrimp! Yummie good and healthy too!
To make the mayonnaise: Beat the egg yolks in a mixing bowl. Then drizzle extra-virgin olive oil in a thin steady stream while continuously whisking the yolks. Add the salt, to taste, freshly squeezed lemon juice, and continue to whisk the mixture until well blended and creamy.
Cut off the top 1/3 part of each tomato. Then carefully scoop out and discard the inside of each tomato with a spoon. Mix tuna, parsley and some of the capers together. Save a few capers to sprinkle on top. Stuff tomatos with filling and enjoy!
