Paleo Pecan Crumble Coffee Cake

Paleo Pecan Crumble Coffee CakeHere's a special treat to have in moderation like all sweets are. Be sure to use a high quality maple syrup and not a flavored one. See below for information to help you understand sweeteners and how to use them.


3 / 4 cup coconut flour

1 tsp baking soda

Dash of sea salt

1 Tbsp cinnamon

Stevia to taste, optional

1 / 4 cup coconut oil

6 pasture eggs

1 / 3 cup unsweetened apple sauce

1 / 3 cup real maple syrup (do not confuse maple flavored syrup with the real thing.  The flavored cheap ones will most likely contain high fructose corn syrup, one of the worst things on the planet for our bodies). 


Crumble Topping:

1 cup pecans, chopped

1 / 2 cup almond flour

1-2 tsp cinnamon

Dash of sea salt

1 / 4 cup maple syrup

1 / 4 cup coconut oil


Preheat oven to 350. Line an 8x8x2 inch baking dish with parchment paper. Set aside.

In a large mixing bowl, combine the eggs, oil, maple syrup, apple sauce, vanilla. Whisk until it’s smooth and completely combined.  In a small bowl, combine the coconut flour, baking soda, cinnamon, salt and stevia (if using) and mix completely. Add the dry ingredients to the wet ingredients and mix to incorporate. The mixture will be lumpy. Let it sit for 2 to 3 minutes, then mix again until smooth.

Pour the batter in the lined baking dish. I use a rubber spatula to smooth it out.

In a small bowl combine the crumble topping ingredients and mix to completely combine.

Spread the crumble mixture evenly over the cake batter.

Bake 40 to 45 minutes until a toothpick inserted in the center of the cake comes out clean. (my oven took about 45 minutes).

Remove from the oven and allow to cool in the pan 5 to 10 minutes before removing to cool on wire rack.
